Cherry Pistachio Cheesecake Bars: A Symphony of Sweet and Savory

These bars are an explosion of flavor and texture, sure to tantalize your taste buds at any gathering. A buttery crust cradles a creamy cheesecake filling, studded with vibrant cherry jam and finished with a delightful pistachio crumble.

Ingredients:

For the Crust and Topping:
1 cup (226g) softened unsalted butter
½ cup (100g) granulated sugar
2 cups (240g) all-purpose flour
¼ teaspoon salt
1 cup (100g) shelled and chopped pistachios
For the Cheese Layer:
8 oz (226g) softened cream cheese
½ cup (100g) granulated sugar
1 large egg
½ teaspoon vanilla extract
For the Cherry Jam Layer:
1 cup (240g) cherry preserves or jam
1 tablespoon cornstarch
1 tablespoon water
Instructions:

Preheat the Oven and Prepare the Crust: Fire up your oven to 350°F (175°C). In a large bowl, cream together the softened butter and sugar until light and fluffy. This will be the base for your delicious crust. Gradually beat in the flour and salt until just combined, then fold in the chopped pistachios. Press half of the dough firmly into the bottom of a greased 9x13 inch baking pan. Set the remaining dough aside for the topping.

Whip Up the Creamy Cheese Layer: In a separate bowl, grab your softened cream cheese and sugar, and beat them together until smooth and creamy. Beat in the egg and vanilla extract until everything is well incorporated. This will be your dreamy cheesecake filling.

Thicken the Cherry Jam Layer: In a small saucepan, combine the cherry preserves, cornstarch, and water. Heat the mixture over medium heat, whisking constantly, until it thickens and becomes glossy. This will be your vibrant cherry layer.

Assemble and Bake: Spread the creamy cheese layer evenly over the crust in the baking pan. Carefully pour the thickened cherry mixture over the cheese layer. Now, crumble the remaining dough over the top of the cherry layer, creating a delightful pistachio crumble topping. Pop the pan into your preheated oven and bake for 40-45 minutes, or until the edges are golden brown and the center is set.

Cool, Slice, and Savor! Patience is key! Let the bars cool completely in the pan before cutting them into squares and serving. Enjoy these delightful cherry pistachio cheesecake bars!
