What we plant today can become part of someone else’s tomorrow. 🌱

As Arbor Week comes to a close, we’re looking beyond the season in front of us.

The trees being planted at Brahman Hills form part of the Green Lung initiative with Sigma International and will become part of the Serenity Garden's story.

They’ll grow alongside the gardens, support the natural environment around them and, we hope, become part of the memories and moments still to come.

Because planting a tree is about more than today. It’s choosing to care for something we may never see fully grown, so that our children’s children can one day wander beneath it.

Here’s to putting down roots for the future.

The first signs of spring have arrived within Serenity Garden.

After months of watching the landscape take shape, there was a little bit of magic waiting for us in the valley this week.

The crab apples have begun to burst into pink and white blossom, while the azaleas are already showing off in glorious shades of pink.

It’s wonderful to see the first splashes of spring colour appearing amongst the newly planted landscape, and a beautiful glimpse of what is still to come.

We can shape the earth, guide the water and plant the trees, but then nature takes over and creates a little magic of her own. 🌸🌿

This International Cabernet Sauvignon Day, our Skyfall Restaurant Manager, Alison Sibanda, showcases the 2013 Méthode Ancienne Cabernet Sauvignon from Springfield Estate .

So, what makes this wine distinctive?

Made from 100% Cabernet Sauvignon in South Africa’s Robertson Valley, Springfield Estate’s Méthode Ancienne is crafted in a traditional style, using natural fermentation and no fining or filtration. The result is a wine with depth, structure and concentrated fruit character, designed to develop beautifully with time.

What would you pair it with?

At Skyfall, we’d pair it with a beautifully prepared cut of our locally sourced beef, sizzling over an open fire, where the richness of the meat and smoky char complement the wine’s depth and structure.
