Close to us is also the popular Walter Sisulu Botanical Gardens, you may just be lucky to spot the famous black eagles soaring on their great wings in the sky above Kloofendal Guesthouse. The Krugersdorp Nature Reserve, Rhino and Lion Park, Cradle of Humankind, Sterkfontein Caves, Hartebeespoort Dam, Cableway, Casinos and many other attractions are just a few minutes drive from the guesthouse.

This cake takes ice cream cake to all new levels - are you up for a slice or two - - ;)

Peanut Butter Brownie Ice Cream Cake

1 8-inch cake

1 box brownie mix, plus ingredients required on box
1/4 cup milk
250gr cream cheese, softened
1/2 cup sugar
1 1/2 cups peanut butter
250gr Cool Whip (cream) , thawed
1 bottle chocolate sundae syrup
1 bottle caramel sundae syrup
1 bag mini snickers, chopped, divided into three groups

NOTE: An 8-inch springform pan is best for this recipe so that you can easily remove the cake once it’s been assembled. If you do not have a springform pan, line your pan with clear wrap before adding your parchment paper and cake board. You can use the clear warp to lift your cake out of the pan once it’s assembled and frozen.

Brownies:
1. Make brownie dough according to instructions on back of box.

2. Grease two 8-inch pans (preferable springform pans, see above) and line the bottoms with parchment paper to allow for easy removal. Bake at temperature on box, reducing baking time to about 20 minutes (You can also bake 1 big brownie – which would cook for the normal time – and cut it in half, but cutting a brownie in half isn’t super easy).

3. When brownies are done baking, allow to completely cool.

Ice Cream:
1. Combine milk, cream cheese, sugar and peanut butter together in the bowl of a stand mixer, or with a hand mixer. Mix until completely combined.

2. Fold in the cool whip.

Assembling it all:
1. Line the sides of an 8-inch springform pan with parchment paper. The parchment paper should stick up above the top edge of the pan, since the cake will probably be a little taller than your pan. If you want, put a cardboard cake circle in the bottom of the pan.

NOTE:
You should be using the same 8-inch pan you used for the brownies. Not all 8-inch pans are exactly the same size. Your brownie needs to fit in this pan.

2. Put the first brownie layer in the bottom of your pan.

3. Spread 1/2 cup caramel sauce and 1/2 cup chocolate sauce over the brownie. Top with first group of chopped snickers.

4. Top with half of the peanut butter ice cream.

5. Add second brownie to the pan, on top of the ice cream.

6. Again cover with 1/2 cup caramel sauce and 1/2 cup chocolate sauce. Top with second group of chopped snickers.

7. Top with remaining peanut butter ice cream.

8. Allow ice cream cake to freeze completely.

9. When frozen, remove from springform pan and remove parchment paper from sides.

10. Top with additional caramel sauce and chocolate sauce, allowing it to drizzle down the sides.

11. Cover with remaining chopped snickers and a little more caramel and chocolate sauce.

Die is nou n lekker nagereg na die lekker braai en sal almal se soettand mal maak van lekkerte.

(2 Melktert)
KORS:
125 g margarien
60 ml witsuiker
1 eier
500ml koekmeelblom
10 ml bakpoeier
knypie sout
VULSEL:
1,5 liter melk
60ml (50g) margarien
4 eiers
250 ml witsuiker
150 ml mielieblom
125 ml koekmeelblom
knippie sout
5 ml vanieljegeursel
kaneel

METODE:
Smelt margarien oor lae hitte. Klop die witsuiker en eier vinnig daarby.

Sif die koekmeelblom, bakpoeier ensout saam en meng dit met die eiermengsel.

Druk die deeg met die vingers teen die wand en op die boom van twee tertborde, elk met 'n volume van 1liter.

Prik die korse en hou dit eenkant.

Kook die melk en botter of margarien in 'n dikboomkastrol. Klits die eiers en witsuiker baie goed saam tot liggeel en sponsagtig dik.

Voeg die mielieblom, koekmeelblom, sout en vanieljegeursel by en klits dit verder totdat alles by die eiermengsel ingeklits en daar geen klontjies is nie.

Klits 'n bietjie van die kookmelkmengsel by die eiermengsel. Klits die eiermengsel nou by die res van die kookmelkmengsel.
Plaas dit terug op die warm stoofplaat en roer dit vinnig totdat dit begin kook.

Skakel die plaat af, sit die deksel op en laat die vulsel 'n paar minute staan.
Giet die warm vulsel in die rou korse.
Sif kaneel oor.

Bak die terte ongeveer 20 minute lank in voorverhitte oond by 180ºC totdat die korse gaar is.
Sit dit louwarm of koud voor.

Jy het net ‘n klein bietjie kondensmelk vir die kors van dié tert nodig. Skep dit sommer uit die blik wat jy gebruik vir die bo-laag.

Lewer een groot tert.

Kors:
1 pakkie klapperkoekies, fyn gedruk
50 ml botter, gesmelt
45 ml kondensmelk
3 ml kaneel

Vulsel:
500 ml melk
15 ml botter
60 ml vlapoeier
45 ml suiker
Knippie sout

Bo-laag:
1 blik kondensmelk
100 ml suurlemoensap
1 blikkie grenadella-pulp

Meng al die bestanddele vir die kors saam en druk dit op die bodem van ‘n gesmeerde tertbord van 30 cm x 20 cm vas.
Verkoel tot benodig.

Vir die vulsel:
1. Verhit 400 ml van die melk en die botter saam tot net onder kookpunt.
2. Meng intussen die vlapoeier, suiker en die res van die melk saam tot ‘n pasta vorm.
3. Voeg van die warm melk by die vlapasta en roer tot goed gemeng.
4. Gooi alles terug in die kastrol en verhit oor lae hitte, terwyl geroer word, tot kookpunt.
5. Laat prut liggies tot verdik en gaar.
6. Giet die warm vla op die krummelkors.
7. Laat afkoel tot gestol.
8. Klits die kondensmelk, suurlemoensap en grenadellapulp saam en laat staan eenkant.
9. As die vla heeltemal koud is, skep die kondensmelkmengsel bo-oor en maak gelyk.

**Verkoel tot benodig.♫

10 ml bakpoeier

7 koppies melk

3 eiers (geskei)

200 ml koekmeelblom

2 ml sout

50 ml gesmelte botter

50 ml suiker

kaneelsuiker om bo-oor te strooi

1. Sif bakpoeier, meel en sout saam.

2. Klits 1 koppie melk saam droë bestanddele

3. Klop botter by pasta in.

4. Klits eiergele en suiker saam

5. Sit bietjie warm melk by.

6. Meng pasta stadig in kookmelk in.

7. Kook tot gaar en laat effens afkoel.

8. Klits eierwitte styf en vou in.

9. Dien op met kaneelsuiker.
