So what did we make today with veggies from the veggie box?

This delicious spinach, leek, mushroom, feta pie 😋

You need:

1 pack of puff pastry
1 big onion diced
2 stacks of leek in rings
150 gram mushrooms
350 gram fresh cut spinach
2 gloves of garlic diced
Some butter
Flour
Milk
150 gram of diced bacon ( leave out for vegetarian option)
Feta cheese
Some celery leaves chopped
Bread crumbs
Mixed seeds (sunflower, chia, flax, sesame, etc)
Spices of your choice. I used pepper, salt, curry powder and paprika powder.

Bake the bacon, add the onions, then the garlic and the leeks. Add the spinach, mushrooms and celery leaves. Season with some pepper and salt, curry and paprika powder. Make some space on one side of the pan and add some butter to melt. Add the flower to create a roux aand slowly add some milk to create a saus. You can make the saus in a separate pan if you feel uncomfortable making it in the same pot with the veggies, afraid you may get a lumpy sauce.

Roll the puff pastry out and cover a buttered/oiled pie dish with the pastry. Cover the bottom with bread crumbs and add the spinach/mushroom/bacon mix to the pie dish. Add feta and sprinkle the pie with the seed mix.

Bake for 40 minutes or until puffed up and golden brown at 175 degrees. Serve a salad on the side.

This has been our home for 12 years and we had the most lovely time welcoming great guests and experiencing amazing wildlife encounters. It is time to hand over the keys and let someone else make it their home.
