Winter is approaching fast, but we are ready

Today we are pressing pinot noir, which after 18 days in the nomblot is now dry (fermentation complete).

Following pumpovers, which allows for colour, tannin and flavour extraction, first the free-run juice, then the "must" is drained, and the pomace (pulp, skins and seeds) is transferred to a press to extract the remaining wine.

From here the pinot noir will be aged in French oak and Foudre for around 8 - 9 months, till ready to be bottled.

We are harvesting pinot noir, shiraz, carignan and grenache noir today. It's no mean feat but working hard to get it all done before the sun sets.
