PROOF returns—one last time.
After two unforgettable nights that blurred the lines between salon, soirée, and something slightly more mischievous—those who were there have been thirsty for another ever since.
So we’re doing it one last time.
PROOF: Past & Future Collide
On April 26th, Merrill transforms into two parallel worlds, built around the indulgent spirit of the apéritif dînatoire—the French tradition where dinner dissolves into a roaming feast of beautiful bites, sparkling wine, conversation, and a slide into dance.
In Alexandria, a Renaissance tableau of cheeses, charcuterie, grapes, goblets, and draped candlelight evokes the decadence of centuries past. Wine flows by the bottle and the rhythms on the dance floor lean historical. At the centre of it all, our favourite caviar dealer Nick Stark arrives with the big tin—a gleaming mound of exceptional caviar served in generous bumps for those who know that luxury should always be epic and outrageous.
Downstairs in the cellar space-scape, the future takes over.
Outer-space confections by Merrill’s in-house baker Butter Dream Cakes appears alongside a trio of experimental cocktails:
Dark Matter Martinis: Inky black vodka martinis drawn from the invisible forces holding the universe together.
Teleportation Tonics: Bright, electric tonics with vodka, gin, or zero-proof for smooth passage between timelines.
Stardust Drops: Vodka gel shots—condensed bursts of liquid energy, released all at once.
Expect a welcome Stardust Drop, a balsamic-style fruit vinegar tasting by Canadian Vinegar Cellars, caviar moments throughout the evening, two themed dance floors, and all wine bottles flowing at up to half price all night.
Historical or futuristic attire is encouraged—but not required.
Come dressed as a courtier, a time traveller, a conundrum of both, or simply as yourself, standing with one foot in each world.
PROOF that the best nights exist somewhere between eras.
