PROOF: Past & Future Collide

On April 26th, Merrill transforms into two parallel worlds, built around the indulgent spirit of the apéritif dînatoire—the French tradition where dinner dissolves into a roaming feast of beautiful bites, sparkling wine, conversation, and a slide into dance.

In Alexandria, a Renaissance tableau of cheeses, charcuterie, grapes, goblets, and draped candlelight evokes the decadence of centuries past. Wine flows by the bottle and the rhythms on the dance floor lean historical. At the centre of it all, our favourite caviar dealer Nick Stark arrives with the big tin—a gleaming mound of exceptional caviar served in generous bumps for those who know that luxury should always be epic and outrageous.

Downstairs in the cellar space-scape, the future takes over.

Outer-space confections by Merrill’s in-house baker Butter Dream Cakes appears alongside a trio of experimental cocktails:

Dark Matter Martinis: Inky black vodka martinis drawn from the invisible forces holding the universe together.

Teleportation Tonics: Bright, electric tonics with vodka, gin, or zero-proof for smooth passage between timelines.

Stardust Drops: Vodka gel shots—condensed bursts of liquid energy, released all at once.

Expect a welcome Stardust Drop, a balsamic-style fruit vinegar tasting by Canadian Vinegar Cellars, caviar moments throughout the evening, two themed dance floors, and all wine bottles flowing at up to half price all night.

Historical or futuristic attire is encouraged—but not required.

Come dressed as a courtier, a time traveller, a conundrum of both, or simply as yourself, standing with one foot in each world.

The entire team at Merrill House would like to thank you all for the tremendous support we have received over the past month during the final weeks of regular service at Brasserie Alexandria. We were packed every evening with many familiar faces, and some new ones who made it just in time.

We have created this collage to capture some of our myriad restaurant memories over the years. From our “Grand Surrealist Dinner” to various national Countylicious themes, it feels like we did it all.

But don’t worry! After 21 years, Head Chef Michael Sullivan is only partially retiring, as he will continue to oversee dinners for small weddings, private parties, corporate events, and more. There will also be a number of ticketed dinners coming in 2026, so stay tuned! 🥂😋❤️

After 21 years as Head Chef at Merrill House, Michael Sullivan will be partially retiring. He has brought immense skill and dedication to every day of that time, and as a result has been widely acclaimed and celebrated.

Chef Michael will remain as head chef of our private kitchen, which will focus on providing incredible catering for private dinners, retreats, and weddings at Merrill.

Don’t worry — before Brasserie Alexandria closes on November 15th, there will be three weeks of “Head Chef Michael Sullivan’s Swan Song Countylicious” highlighting some of his favourite dishes from over the years. 🦢🥂
