The unofficial start to summer is here!

The Pool Grill is officially open daily from 12 to 6pm, serving up seasonal favorites all summer long. Think grilled fish tacos with salsa verde, buttery lobster rolls, Grimaldi Farm smash burgers, vibrant grain bowls, chilled noodles, crisp local lettuces, and more, with local chicken or Steelhead trout available to add to any of our signature Troutbeck salads.

And of course, no pool day is complete without something sweet: house made popsicles, ice cream sandwiches, cocktails, mocktails, beer, and wine await.

Celebrate the unofficial start of summer with us!
 
Join us Saturday, May 23rd for a family-friendly Memorial Day Barbecue featuring a festive farm-to-table spread, music, lawn games, and early summer fun. We recommend arriving by 2PM to enjoy the afternoon
 
On Sunday, explore the art of natural indigo dyeing and learn the traditional process from plant to pigment with . Guests will receive a bandana and fabric to experiment with, and are encouraged to bring their own 100% cotton pieces to dye. This event starts at 11am.

Explore denim as fabric, history, memory, and meaning at Troutbeck.
 
AVANT founder and heritage fashion authority Eric Maggiori joins denim aficionado Spencer Barksdale for a conversation on one of the most misunderstood fabrics in the history of clothing. 

From the mines of California to the runways of Paris, denim has always lived in contrast: labor and rebellion, utility and beauty, belonging and individuality.
 
To anchor the evening, Eric will share ten remarkable pieces from his personal archive, spanning the early 1900s to mid-century America, each faded, mended, and alive with use. Spencer will also bring selections from his own archive, offering modern interpretations of denim’s historical elements through fabric, wash, design, and upcycled imagination.

Year 5 of the Troutbeck Symposium took place this week with over — the regional educational program where middle
and high school students uncover the histories of their own communities through archival research, oral
history, and creative storytelling.

Since its founding in 2021, the Symposium has grown into a regional ecosystem of civic learning, connecting
schools, educators, archivists, historians, artists, and cultural institutions across New York and Connecticut.

This year 25 schools participated and even more attended and are considering involvement. This project-based approach to local history is rewarding and contagious!

More celebration of the students’ extraordinary work this year to come, but for now, just to say, WE DID IT!

The first taste of spring has arrived.

Begin with Pink Moon oysters with rhubarb and pink peppercorn, a sugar snap pea salad, or chilled asparagus soup. Continue with a rack of lamb with merguez sausage, Wild Hive navy beans, and salsa verde, or grass fed beef striploin with Mokum carrot, Hakurei turnip, and English peas.

The menu reflects the season as it unfolds around us — bright, fresh, and full of life.

Salisbury Jumpfest is a cherished winter tradition in our neck of the woods, rooted in Salisbury’s long history of ski jumping and community spirit. It began in the early 1920s when local athletes built jumps on the hillsides and drew crowds eager to watch the sport take shape. Founded as a competitive event, the festival has grown into a weekend of activities that bring together generations. Celebrating 100 years, Jumpfest honors its past while continuing a legacy of winter sport and local pride, and draws competitive athletes from all over. Their motto is “You Will See Future Olympians Here.”
