On Sunday, July 5th, we will have the distinct pleasure of hosting Shunji Hashiba of the acclaimed Sushi Shunji in Tokyo for a one-night-only collaboration at Harbor House.
After more than a decade at the legendary Sushi Saito, Shunji and his wife Ayapan founded their own restaurant with Ayapan watching over service and the beverage program. They established themselves as one of Tokyo’s most sought-after dining experiences. Shunji is celebrated for his masterful interpretation of Edomae-style sushi—an artful balance of refined craftsmanship, creative sensibility, and a deep reverence for traditional techniques.

Earlier this year, Chef Matthew had the great honor of spending a week in his kitchen, observing and engaging in a meaningful cultural exchange. The synergy between us was immediate and inspiring which led us to the idea of recreating that experience here in California—reimagined through the singular lens of Harbor House. For this special evening, we will adopt a more Japanese approach to our cuisine, thoughtfully complementing Shunji-san’s nigiri. Ayapan will bring a selection of her favorite rare sakes from Japan.
