Eggs Benedetto this morning. My interpretation of an Italian version of Eggs Benedict.

A bed of fresh arugula and spinach, toasted polenta disks, sautéed sweet onion and yellow bell pepper, crispy prosciutto, poached eggs, marinara sauce and Parmesan cheese. The mix of it all tastes delicious with warm garlic bread.

Always chef made breakfasts here at The Napa Inn & Spa. Plus you get home made yogurt, granola, and a chocolate truffle to due for.
