Whelp! One of us is 51 years old today and BOTH of us our 15 years married today!!!! What better way to celebrate than NOT escaping almost two escape rooms. (We outright DID NOT escape one and were like SECONDS from solving the second one!) Both of them were at LOK'd Room Escape in Manchester, NH. Then we went to Red Arrow Diner for lunch. Good food, fun vibes, I mean you can’t go wrong. Also, apparently Adam Sandler is from Manchester, NH. And we know that is my favorite Halloween film!! All in all a fun day! Even the Skellies celebrated with us!
Also, we have been enjoying a variety of cupcake flavors from Lo’s Bakehouse, LLC. As it is our anniversary, the Boo wanted to surprise me with a wedding cake tasting. We had a very small wedding-literally 7 people and it was on a Thursday. We were married in Sycamore, IL by some guy who had a tiny chapel on his property. My ma, brother, sister-in-law and niece were there, as was the Boo’s parents and grandma. A few months later we had a backyard party and my mom made our cake-it was cannoli filled and delicious! But I never had the opportunity to do a cake testing (or really ANY wedding planning stuff. Seriously, we picked our wedding date because I already had a 4 day weekend because of my birthday.) So the Boo ordered us 6 flavors of cupcakes and they have been delicious!!
A fine way to spend a birthday/anniversary!! Also!!!!??????!?? The Boo got me some fun presents including a VERY cool Ouija board!!

This year we are making a point to visit fun places in Vermont (and all parts of New England)! Today we went to Dummerston and picked up delicious food at The Vermont Country Deli and toured Rudyard Kipling home, Naulakha. First, I have to say the wait for food was well worth it! We had pulled pork Sammie’s and Mac and cheese and little cakes for dessert. The Mac and cheese was some of the best I’ve had. Naulakha was a fun fun house to tour. It is otherwise an Airbnb, but they open it up once a year when the rhododendrons are in bloom.
So, go out and see the fun things in your own backyard!

Our breakfast yesterday was chilaquiles with red salsa, corn and zucchini. A perfect breakfast that works for gluten free and vegetarian. Topped with cheddar cheese, this was delicious! It probably is normally served with fried eggs, but our guests requested scrambled (as would I). 😋

A post for when things go horribly wrong… 😱!!!
We have some gluten free folks staying with us. I decided to alter a vegan chocolate chip cookie recipe to be gluten free (and not vegan; I used real butter…) instead of flour, I used oats that were whizzed up in the food processor. Folks, this substitution doesn’t work out. The amount of sugar is far to liquidy for the oat “flour.” So instead, I ended up with this tasty mess that we couldn’t put out for our guests. Instead we decided to do a taste challenge with Tates gluten free cookies and Chips Ahoy gluten free cookies. I’ll be honest, I am really liking the Chips Ahoy ones. Our guests got a few of each. Because everyone gets cookies here!!! Even when I mess up a recipe. (I do have a tried and true gluten free chocolate chip cookie recipe using almond flour.)

We are looking to have a busy Summer, which is always super exciting and means I get to do lots of baking!!! I made these two breads for a guest we’ve had for the last few days. One is a banana bread made with fig, pear and honey jam and the other is a zucchini bread with chocolate chips. So yummy!!

Today is Dia Del Completo! This fun day of hot dogs comes to us from Chile! The history of Dia Del Completo began in 2009 as a fun way to celebrate Chile’s love for their special hot dogs. A popular fast-food chain, Dominó, came up with the idea. (According to Days of the Year website).

They wanted to promote their delicious completos and thought a special day would do the trick.

The idea quickly caught on across the country. People loved the excuse to indulge in their favorite loaded hot dogs.

The special hot dogs are completos. Their origins (according to Wikipedia) :

“The dish was first made in the 1920s in the fuentes de soda (soda fountains) of central Santiago.[3] The completo was brought to Chile by Eduardo Bahamondes who had recently travelled to the United States on business. It was there that he first saw the "hot dog" which he decided to bring back to his home country. Once back in Chile, he then opened a restaurant in Santiago's historic centre called Quick Lunch Bahamondes in the Portal Fernandez Co**ha where he began to introduce the Chilean people to the hot dog. As people didn't like the original preparation, he added other ingredients such as tomato and avocado, which eventually became accepted by the public.[3]”
Of course the Skellies had to join the fun! They made theirs with tomato, avocado and mayonnaise!! (That seemed to be a recurring topping combo) These were served on our brand new plates! Our little just had to have the cat plate!!!!

While we were in Galveston we stopped at Hendley Market and found these super adorable micro nativity scenes. For those of you who have visited our place, you know there is quite literally no room at the inn… 😜. We can only go micro! But I couldn’t resist these. One is so tiny it’s in a macadamia nut shell and the other is made using pinto beans (the holy frijoles!!!). Baby Pinto Bean Jesus is smiling!!!! Anyway!!! I recommend this shop if you ever go to Galveston. So much cute stuff!!! Also, it was very hard indeed for me to leave Galveston. It was our first stop on our two and a half week trek back home, and honestly I loved it! At first I scoffed at all the “island time” hoopla, but after the first night I totally got it!!! My life has been fairly bland ever since!!!! I had thought of building a mote around our house and making the B and B a little island, but I feel like that would be a bad idea in the long run. Plus I still wouldn’t have a beach. 🤪
