We are constantly exploring indigenous African ingredients and the stories they carry. 🌿

Madumbi, also known as 𝘵𝘢𝘳𝘰 𝘳𝘰𝘰𝘵 or 𝘺𝘢𝘮, has long been cultivated and enjoyed across Africa. Rich in starch and beautifully earthy in flavour, it offers an interesting local counterpart to the familiar South American potato.

In our kitchen, Madumbi is transformed in a number of ways, from delicate fried crisps to our own interpretation of gnocchi, celebrating heritage ingredients through a contemporary fine dining lens.

Our passion is exploring the space where heritage ingredients meet contemporary fine dining....

One of those ingredients is Sorghum, an ancient African grain with deep cultural roots. We reimagined the popped grain in our Earth & Sea starter with beetroot, bokkom chawanmushi and abalone.

Lightly popped for texture and nuttiness, sorghum brings a subtle reminder that some of the most exciting ingredients are the ones that have always belonged to this landscape.

Fine dining is an opportunity to tell a story about heritage, to remember what people once ate and celebrate the flavours of the continent.

Zero-proof pairings

This mocktail draws on the Outeniqua Mountains for inspiration ... with its pear orchards, bee hives and and misty valleys.

The 𝗪𝗵𝗲𝘆 & 𝗣𝗲𝗮𝗿 𝗦𝗽𝗿𝗶𝘁𝘇 is a mocktail of pear juice and soda layered with honeyed cream, a dusting of bee pollen and a sliver of fresh pear.

Cape Rock oysters are one of South Africa’s oldest heritage foods, harvested and enjoyed along our coastline for more than 150 000 years. 🦪

Archaeological shell middens discovered along the Garden Route coast reveal just how deeply connected these oysters are to the story of human life in this region, offering evidence of coastal communities gathering and eating them thousands of generations ago.

At Serendipity Country House & Restaurant we continue that connection to place by incorporating Cape Rock oysters into both our 5-course Table d’Hôte and 8-course tasting menus.

For us, this is more than a delicacy, it is a taste of local heritage, ocean terroir and culinary storytelling.

Fine dining is about so much more than food.....

Yes, there is technique, precision and beautifully plated dishes… but what we truly create is joy, connection, memory and experience. ✨

Recently, Rudolf & Lizelle took our trainee chef, Jock Mackenzie, on a journey through the Cape Winelands to experience fine dining from the other side of the kitchen pass.

Jock is an incredibly talented young chef with a bright future ahead of him, and we wanted him to experience the feeling great hospitality creates: the atmosphere, the anticipation, the theatre, the emotion and the small moments that stay with you long after the final course.

Sometimes the best way to grow a young chef is to let them sit at the table. 🍷

📍 - We enjoyed unpretentious á la carte fine dining and the 1997 Vin de Constance dessert wine.

📍 - we compared the 2012 Chenin Blanc and the 2023 Chenin Blanc

At times, our kitchen has access to wild red-eyed rock pigeon, a species abundant across South Africa and often regarded as a significant pest of grain crops.

Where appropriate, we work with these well-fed birds with care and intention, transforming them into dishes that speak to both place and season.

Handled with precision, the meat is delicate yet deeply flavourful, a canvas for distinctly South African notes.
