Tonight I prepared a 3-course anniversary dinner for a couple celebrating FORTY years together at Triple Creek Waterfall. 🤍

The setting was pretty hard to beat, and the menu was all about WNC summer ingredients:
🍑 Local peach, Cherokee purple heirloom tomato & Buffalo mozzarella Caprese with basil & 14-year aged fig balsamic glaze
🐟 Crispy skinned cast-iron fried WNC rainbow trout with dill brown butter, charred lemon, garlicky wilted spinach & foraged mushrooms
🍓 Chocolate, fruit, & nut board for dessert

Delicious food, a magical setting, a good bottle of red wine (or two- who’s counting?!) and 40 years worth of memories to celebrate… It was my honor to be the one cooking for their milestone anniversary.
