It is shaping up to be a beautiful spring and it’s the perfect time to try out and introduce new items for breakfast. I will be busy testing out some fun additions and sharing along the way. Today was a puff breakfast pie with eggs, ricotta, spinach, cheddar cheese, scallions, and potato. Topping it off with sun-dried tomatoes, feta, and chives!
