Don't believe any recipe that asks for '1 cup of Full Cream'. Eggs. milk, sugar, both lemon + vanilla essences, raisins ..... and finish with a Blessing of Nutmeg. delizioso!

FRITTELE DI CAVALFIORE. Think corn fritters but add steamed cooled cauliflower, use GF flour and spice up with a bit of chilli and any fresh herbs (basil, thyme, marjoram) buon appetito tutti!

Numbers in many traditions aren't there by chance. Here is something the Little Cellar Rat learned this morning.

Five almonds. Never four, never six. 🌿

The bomboniera came home in your coat pocket and it was never a random handful. Five, because five is odd and cannot be divided evenly, the way a marriage is not supposed to be divided. And each one stood for something: health, wealth, happiness, fertility, and long life.

The almond is bitter. The sugar is sweet. That was the entire message, handed to every guest in a piece of tulle tied with a ribbon, and most of us took it, ate two, and put the rest in a drawer without ever being told what it meant.

My grandmother kept hers. Decades of them in a dish on the dresser, going chalky, from the weddings of people who were long gone. She could tell you whose was whose. 💍

Do you still have a bomboniera in a drawer somewhere, and do you remember whose wedding it came from?

ciao tutti! You know the dish you haven't made for a while. For the Little Cellar Rat it's RISOTTO. Not sure why it slipped between the cracks but then again, it's all the tastier when you welcome it back. A tip from TLCR... cook the rice (and it's got to be ARBORIO) in chicken stock in the microwave. Do the Usual Suspects in the big pan and add the rice once it's done. Resurrecting the dish brings a bonus, an idea for side dish of starch. Cook the rice as per risotto then add a generous amount of freshly ground black paperer (all the better if it's a red-white-green-black blend)and top with shaved/grated pecorino. The Cellar Rat made it last week to go with a Lemon Chicken dish. Any left over makes for a speedy lunch (cold or reheated) the next day. 'Cook once, eat twice'. mi dispiace... no photos. 😥 Too busy eating while it was hot. Next time... I promise.👍

ciao tutti! Don't think you need to have a largish garden to grow and use herbs. As Costa Georgiardis maintains 'An old rubber boot with a Basil pant on your doorstep, close to the kitchen is a good start'.
The Cellar Rat whole-heartedly agrees. Who else knows the simple pleasure in walking just a few steps to the back landing, scissors in hand, to pick basil for the pasta sauce, thyme for polpetti or a lemon chicken. No doubt you rub the leaves between thumb and middle finger, inhaling the distinctive fragrance and smile a brief 'grazie mille' to the humble and generous plant. buona cucina tutti.... e buon appetito!

ciao tutti! Yes, it's dry (in fact very little rain since Jan 26) but oh doesn't an old garden reward you when you give it some TLC. Not a leaf or blade of grass or fallen branch is wasted here. They are all returned to Mother Earth as mulch.
